A mixture of a variety of proteins - but gluten-free

Teff contains a mixture of a variety of proteins which include essential amino acids such as cysteine and methionine. An adequate protein intake is of great importance to everyone wishing to ensure that they get sufficient nutrients for the development or maintenance of the body's cells.

Natural teff does not contain any gluten, a property which offers two benefits: firstly, teff is suitable for people with gluten intolerance (celiac disease) and, secondly, teff - in contrast to grains that contain gluten - is completely soluble in water.

The proteins in teff for people with gluten intolerance

A severe oversensitivity to gluten is referred to as gluten intolerance or celiac disease. This intolerance is characterised by symptoms such as chronic diarrhoea and stomach ache. People with gluten intolerance need a gluten-free diet. A much larger group of people suffer from less pronounced but, nevertheless, regular intestinal/gastric complaints in which a certain degree of oversensitivity can play a role. The absence or restriction of gluten and the presence of non-digestible dietary fibre reduce the risk of complaints of this nature and promote a healthy intestinal environment.
